Soria Natural: How to reuse tofu proteins?

Another interesting challenge for the OITB partners is coming from Spain with the pilot project of Soria Natural – a key producer of natural alimentary and herbal products .

Soria Natural brings innovation, research, and sustainability into the cultivation and manufacturing of natural products, such as alimentary products, food supplements, and even medical plants .

Currently, they generate large quantities of waste called okara in the manufacturing process of one of its bestselling food products – tofu and this byproduct is not utilized further.

Convert2Green, represented by University of Burgos will collaborate with them to design an extractive process for okara proteins to be used as ingredients in future products.
